With a sheer seam, each half of the boat under construction still has lateral symmetry. This is important, as the tension developed in the bent members that make up the hull is at least partly balanced by an opposing member on the other side. The balance is not perfect, which is why hulls and decks can develop curvature that makes them difficult to assemble.

If you do a hull/keel split, the halves will not have a line of symmetry - the unequal tension of the hull members would then cause twist and kinking to an even greater extent. Putting the hulls together afterwards would take a lot of clamps and straps, to do the job of evening out the unbalanced tension in the hulls. Sounds like a pain in the neck to me.
