Strip: Seeking advise for a second build

I have recently completed my first kayak, a One Ocean Cape Ann Double. I'll post a couple of photos soon. Now I want to build another strip built, but a single this time so I can go out anytime. What would be a good yak choice for a beginner paddler (6 feet tall and 240 pounds). Being as I'm a beginner and a fair weather paddler, I am more interested in stability and an easy paddle. What would you all suggest.
