Hi Jeff from the info you provided you may be intrested in the Great Auk.
The Auk is a stable boat and the build is not difficult.
The One Ocean kayaks have nice up swept ends so a Guillemot Large may work as well and look similer to your double.
Another one I would take a good look at is the Spring Run by Redfish Kayak.
The Spring Run also comes in a large version.
With paddler weight at 240 and a possible load of 35 or more a little volume might be welcomed.
