Why not build something in the 14-15.5' range? It may be a tad big for him right now, but it will take a lot longer to potentially grow out of. I say potentially because most kayaks in that size category will still have enough displacement for an adult, although it would then be considered "low volume".
I also like the Yost SOF idea, but then again I'm partial to SOF in general...
