I wouldn't worry about that flexible hull stuff. I and loads of others have been using 1/4" ply coated with epoxy for bulkheads in strippers for years with no problems. Of any construction method used for making kayaks, strippers are probably the most rigid. If anything, a solid bulkhead adds a tremendous amount of strength to the whole structure.
