Keep in mind that using thin strips significantly compromises stiffness. The farther apart the two glass layers are, the stiffer it is. It also compromises strength, but not as much as stiffness. The wood does provide some of the strength and stiffness.
The glass lay-up you use should be determined by the intended use for this boat. I live in S. Florida. I don't have to worry too much about being slammed on top of a big rock, but I might be facing some decent sized waves. I like the stronger cloth on the outside of the hull to better hold my body weight when my boat is in the waves. For the deck, I like the stronger cloth on the inside to strengthen the deck when my body weight is on top of it during rescues.
3.5mm (just a hair over 1/8") strips are pretty thin; after fairing and sanding they'll be even thinner. Unless you're going to use your boat in pretty calm conditions, I'm not sure I would go with a light weight cloth.
