Hi Dave-

If you polish without sanding first you'll just end up with shiny dust nibs. Yeah! The Fine Woodworking web site has good information on polishing varnish. It's a subscription site, but if you do a search and find a promising article (they'll let you read the first page) you can get a two-week free trial. Bill's right, though- varnish takes a LONG time to cure completely, so don't be in a big hurry.
