Do it, for sure - the ideas you've outlined are fine, and a one-night class doesn't give you a lot of time to work with. Be great to have a strip built and a S&G there - easier and quicker to show than explain - maybe a display of shots of kayaks under construction - just be aware that time goes by really quickly. Any sort of hands-on, get-up-and-move-around activity really helps keep folks interested and involved.
