Take it up - Id focus on getting them on the water and maybe a skin on frame would be better to concentrate in the short time you have. They can move to other forms when theyre 'hooked'. Id have a kit S on F ready to make up and get a lot done during the time. My experience at doing this sort of thing is you need three times the course time to prepare. Having S and G and stripper might distract however if they are all recreational woodworkers then maybe that should be more of the focus.
