I'll be teaching a class this winter building a Tom Yost Sea Bee, short boat to fit in the limited space available. This is a pretty nice little boat that offers a chance to actually build the boat (from a pre-cut kit, that you'll make). You have to streamline the process to complete it in a reasonable amount of time while allowing the students to help. We're giving the boat away to one of the students at the end of the class.

With the multiple chines it teaches many things about boat building in general and can be built fairly cheap.

I'm making all the frames and stringers ahead of time so the students will only use hand tools, also limits the amount of dust generated, we're building in a kayak retail store, so covering everything with a layer of dust wouldn't be popular .

I'd call or Email the epoxy supplier you use and see if they'll ship their product manuals for free. West brand epoxy sent me a dozen packets free, has lots of great info for the students. I'd also write up a basic building manual for the students and include references. Finding materials and supplies takes almost as much time as building.
