Here is a link to a site that sells stitch and glue plans for SOT fishing Kayaks. The people that build them seem to love them. The forums have very detailed builder's logs with plenty of tips and tricks. Its JEM watercraft.

I built a pirogue designed and sold at this site because I wanted something I could build real quick to use this summer with my 2 year old son. It was a little cramped in a one person sea kayak so i needed something roomier. The plans were very detailed and easy to follow.
