I have never done this, but I am quite certain you could do it. I know a guy who has used the hull of an existing kayak as a mold for fiberglass. He waxes the hull very well with mold-release wax, lays down something like 3-4 layers of 10 oz. cloth with epoxy. Then he pops the new hull off (leaving the original kayak intact except for a little wax) and starts at the step you would be at once you cut off the deck (unless you choose to use our boat as a mold). He mostly made decks out of plywood or fabric. Like you said, to strip, you'd just need to put in a shear clamp, then make forms. You also have the option of putting in deck beams a la skin on frame construction, so you could have a custom fit masik/sikortarfiq for optimal form-fittedness. You would attach the deck the same way Nick outlines in his book, with fiberglass tape along the seam. let us know how it goes
