Hi John,
I’m in the same neck of the woods as you – but down a bit in the lower mainland of BC. And I’m jealous of your setup and location, heh heh.

As you have such a nice shop setup and are going to be making a few boats, you can afford the space to have a bunch of different sawhorses – and so trying out different approaches might allow you to find the best result over time.
So the light frame ones like John C ‘s or others similar and maybe narrower might end up being all useful, however the features for me were:

In my case of small space, I wanted a set of compact, but strong, builders type sawhorses that could be used for many applications including short and long yak building. The following parameters seemed important to me:

1)Quick folding for easy storage; quick setup - drop the bottom shelf down and the sawhorse is ready to go.
2) Strong & stable – can walk and climb on
3) Wide, long and flat top - A mini work surface and place to rest tools, or space for a kayak and wide ply shelf for s&g building.
3) A bottom shelf - lots of space for clamps, tools etc kept off the floor.
4) Electrical receptacles at each end - Really, really handy. One extension cord plugs in 4 tools, OR one extension plugs in 3 tools plus the OTHER sawhorse and 3 tools plus another sawhorse etc, etc, etc, if you have them - ad infinitum from one input only! The sawhorse’s plugin dangles just ½” short of the ground to plug into an extension or box and never tangle or be a tripping hazard.
5) Folding - folds up for better space usage
6) Casters – sawhorse is stable and yet when one end is lifted, will roll like a 2 wheeled wheelbarrow.
