Your knees will never get close enough to the shear clamps to hit them, but if you're worried, you can always round them on a router table or with one of these:

I use both a router table and the cornering tools extensively when building SOF kayaks, as I don't like leaving sharp edges anywhere that the kayak skin or my skin will contact them. I've also found numerous other uses for the cornering tools, including rounding edges on a recent decking project.
