John,

That is the way I built my S&G Bluefin and it is fine.

But I am not sure you will save that much epoxy as I left the inside of my boat with just two coats of epoxy on it except for the cockpit and did not attempt to fill the weave of the tape. The next boat I plan on just using a light piece of fiberglass to cover the entire inside of the hull. I found the FG tape to be a PITA.
