Here is what I did and I got the idea from probably someone on here? If not then a web site of someone on here. :)

Once the coaming was built I sat it on the boat. Shimmed it so it was level and wouldn't move. Took a straight edge and marked its outline on the deck. Cut the opening and then did a little hand fitting so the coaming fit inside the cut out.

Marked along the side of coming and trimmed it the right shape. Then I put it back on the boat, made me a block the height I wanted the coaming and walked it around the coaming marking the height. Trimmed it one more time and then attached it to the boat. Then built the lip.
