I am also using 9 oz nylon, one suggestion, stretch it longitudinally as much as you can get. It will make a big difference in the end. I used Zar oil based Poly on my last boat and I will be using it again on the new yak. I second Bill Hamms suggestion to roll or brush the first coat, you really have to work the poly into the weave to get good base for the other coats, even to the extent of brushing it on thick and squeegee it into the weave.
Here is a shot of my newest, It's a loose interpretation of Brian Schultz' F1 using frame and stringer construction: 14' x 22". I have a few loose ends to finish and then it's a Tyvek wrap trial run.

She is 17 foot by 20". Going to be quite a change from what I am used
: too. Not near the stability Wren has.
: I am going to use SkinBoats 9 oz nylon. I like the fact I can shrink it if I
: mess up and get some wrinkles. Not sure of the coating yet. I want to try
: spraying it on since I have the gear. So I don't want to mess with a 2
: part mixture.
: I want to use Zar, but not much luck finding it locally. So not sure on that,
: may just order some and pay the shipping.
