I'm rather surprised that your prime considersation involves something at the tail end of the process.
Hulls made with fabric laminates are usually done over molds. The entire process is very labor intensive and building the mold can be more difficult than laying up the hull. In my view, building a mold for only a single hull is not worth the effort.
If you are experienced go ahead. But, if you are not, attempting something like this with an extremely expensive fabric like carbon fiber could be risking a lot of money.
In the years I have monitored this site there have been dozens of propositions like yours but only one person ever came back with evidence that the project was successful. And that individual seemed to be part of a crew of who shared the burdensome workload and the expense.
Don't mean to be negative. I looked into this some years ago and concluded it wasn't a project for a lone indiviual and it had the downside of being very easy to screw up.

: I am considering building a Carbon Fiber sit on top kayak. I feel pretty good
: about everything except how to seam the deck to the hull without having
: access to the inside... any ideas?
