I have a pair of 2' X 8' tables constructed fron a single sheet of 3/4" plywood I had cut at the local lumber yard. The plywood is supported by a 2" X 4" frame that is 2" inside the perimeter of the plywood. This gives me plenty of room for clamping. I cover the table with plastic sheeting to prevent the epoxy from sticking to it. I have used the tables to build a 18' kayak and a 14' canoe. I like this design quite well.
The book "Kayaks You Can Build" by Ted Moores provides instructions on building the tables. Plus, I found the investment I made in this book to the very worthwhile. I would suggest you add it to your winter reading list.
