Putting the nuts in epoxy is not that hard. first drill an oversize hole and fill it with epoxy and re-drill it to the bolt size (this saves your wood from water damage). Take the bolt and fill the threads with vaseline {probably other greases will work too). Also grease the shank and tip. Use enough vaseline to get complete covering but not so much that it will mix in and contaminate the epoxy. Now bolt the fitting in place, maybe putting a washer or extra glass backing in place first. Chop up a bit of glass, mix it with epoxy and cover over the nut, put a cover of glass mesh over the chopped stuff to make it tidy. Let it harden. The bolt should unscrew with no problem, I've always loosened the bolt while the epoxy was still green but I don't think it should matter if you leave it longer. I've never had any trouble taking out the bolts. If the fitting needs more than one bolt you should do them all at once to avoid alignment problems. Obviously all this gets done before you join the deck to the hull which also gives you the opportunity to deal with a bolt that goes wrong and sticks.
