Technically, the volume of a boat has to do with the amount of weight that can be contained therein. If you choose a high volume boat and don't normally carry something within the designed load-range the boat will sit up on the water like a cork and the high center of gravity will make it more tippy than it should be.
For stabilty the hull has to be pressed down into the water to try and get the C/G close to the waterline as is practical. You can go shorter and wider but the weight of you and your gear determine what amount of displacenment a prospective boat should have not your linear measurments.
I have family in Bayfield County. I only paddled there twice. Off Squaw Bay/Meyer's Beach, and in the bay off Washburn but the Meyers Beach paddle was nicest big-water paddle I ever did.

: I'm looking for a plan for a strip boat. A boat for someone 220 pounds and 5'
: 10 "and have a high center of gravity, long torso, short legs. Most
: Greenland style kayaks are made for smaller people it seems. Can someone
: direct me to a plan I could purchase for a large person Greenland style,
: strip built boat?
: Current Designs is coming out with a super-sized Greenland boat this year in
: composite fiberglass. I sat in one a few months ago at their factory in
: Winona, Minn. and it fit me very well. I was planning on buying one this
: spring, but found I need shoulder surgery again and I won't be paddling
: till October. Just what I wanted to hear! Not knowing what the heck I was
: going to do this summer, I stumbled across wood boat building on
: paddling.net a few days ago. WOW, I'm a retired furniture builder with a
: well equiped wood shop at home. If I can't paddle this summer, I'll build
: another boat, and the more I research about strip built kayaks the more it
: is peaking my interest. Can someone help me find a plan. I live close to
: Lake Superior and kayak camp the Apostle Islands quite a bit, so it needs
: to behave in rough waters.
: Thanks to any replies,
: Paul
