If you ever paddled a SOF boat, you can feel the entire frame flex as you drop into a wave with your 185+ pounds in the boat. The areas that make contact of a typical SOF do not have enough surface area for glue to work. The glue joints will crack loose. I'm sure some of the mortice and tenon joints may stayed glued ?? but even those I doubt it.
