There is no requirement that the strips have to be bead and cove, many of us use a rolling bevel instead, fits the strips so the edges fit snug.
Strips aren't epoxied together, are glued with carpenter's glue.
Those strips are pretty thin, will take some playing but should be able to make them work for a stripper, the forms might need to be closer together if there is any sagging between them with strips that thin. For most designs they'll need cut to narrower widths than an inch and a half to get any curvature, you don't have any extra thickness to play with to plane to shape so will need to use fairly narrow strips so not much is required.
1/8" is pretty thin for most S&G boats too and making panels out of strips would be wildly time consuming, specially to replace relatively inexpensive plywood.
