If you're feeling pragmatic and don't care about having a "wood look", for the price of marine plywood, you can get HDPE or UHMWPE (what Tom uses in his boats) and not have to worry about sealing plywood. It seems to me that most people only go the plywood route to save money and because it's easy to find.
