The composite sandwich model is a convenient (in some cases dearly held) but approximate way to explain how these structures work. The reality is that the wood contributes to the strength of these boats. As the strength/stiffness of the wood increases, the contribution to the strength of the lay-up increases. Take a look at some of the test results from the hardwood samples Mike Loriz made up.
One approach is to use the density of your wood to calcualte the strip thickness for a given target boat weight. Then, cut some strips of that thickness and experiment with how they are to work with.
