A good method I have found to make those long thin sharp points is to hold the strip you are working on backed up against another as you use the plane. Edge to edge with the back up strip projecting out slightly past the one you are working on. Cut into both the strips as you go. The second strip supports the thin point. It also keeps the end from bending while you plane it down and helps you make a straighter cut which will fit in to the joint better.
