You'll need paint anyway for UV protection. Using pigmented fill coats (not wet-out) will reduce the number of paint coats, since epoxy is tougher than paint you'll have a tougher bottom with a couple coats of paint on white fill coats than three coats of paint on clear sanded fill coats.

When I've painted the bottom interior of a kayak I only put down one coat of paint on one pigmented fill coat.

It makes a big difference if you're thinking of a yellow hull as it takes another coat of yellow paint compared to white for opaque coverage.

Don't worry about the weight.

One of the advantages to paint and pigmented fill coats is that you can see the depth of any gouges.

I did a normal wet out coat with two thin fill coats. When they cured it was scraped/sanded to just above the glass then two pigmented fill coats on that.
