My preference for building SOFs is white pine, but any white softwood should work fine. I'm very picky about the wood I use and will not tolerate knots, but many people build successfully with knots in the wood. From what I've heard, Harvey Golden has built many boats this way. Knots are less critical in wider parts like gunwales than in narrow parts like stringers.
