Nice job - congrats! Yes, you were reading things right, though - personally - I just leave the screws in and forego the pegging step. I use brass, bronze or SS screws for that. If you're removing the screws, then they don't need to be very long since all they are doing is temporary clamping. 1.25" should be fine, and, ideally, narrower than your wooden pegs. Drywall screws are quick and easy, but you still might want to drill pilot holes to reduce wood splitting.
