I've not used a carving horse for paddle carving, but I've used one in making parts for horse drawn wagons and sleighs. I made a carving horse about 10 years ago, and it is a handy thing to have around the shop. It's also called a schnitslebunk,(German). I know my spelling is way off probably. The drawing in the above post is very good. When using a soft wood like cedar for a paddle, you might consider padding the dumbhead, that the thing that clamps down on your work. A piece of leather would work fine. Most of my experience has been with carving red oak and ash. It's quite enjoyable. Pressure with your feet keeps your work in place and it is rock solid with very little effort.
