Nick addresses the cockpit location issue by giving suggested locations on his website. You can find it by looking under Books/The Strip-Built Sea Kayak/Changes and Corrections. I can't comment on cutting the form since I didn't do that myself.

I really enjoy my Guillemot Double, hope you do as well.
