My rule of thumb is enough to clear the knuckles. The boat I just finished turned out lower than I expected. It is quite low but the more I paddle it more the more I like it. I don't bang the paddle when at all. I have never hit my knuckles and the only issue I see with it is being broadsided by a wave, but even my nylon skirt takes care of that.
This photo it is leaned a little because of the mutt on this side.
