Well, I sure can't help with suppliers in Oz, but single part polyurethane is fine. Over here, many folks use ZAR exterior oil based polyurethane varnish. Just about any will do, though, apparently, including just plain exterior paint (oil based probably being better). I can only attest, myself, to the Zar, though.
Other, pricey and likely not available down-under, options are Coelan and "Corey's Goop." Then there's hypalon and neoprene coatings, too....

Anyway, have fun! Looking fwd to pics!
