Hi,

These sorts of hatches were used on a range of plastic sit-on-top fishing kayaks I used to sell. Theirs didn't have the hinges, so the hatch cover could be completely removed.

The T-shaped locking tab rotates 90° to lock before folding down into the recess so there would still be a little strain put on the skin, but not as much as a screw-in hatch would give.
