I don't see the point in varnishing inside. Varnish is there to protect against UV and by the time one has installed seat, backrest etc. Especially if it is a Redfish style seat, you are more or less covered. A cockpit cover will protect if stored in sun and spraydeck does the same in use. Varnish is only going to add weight on the inside.
