I'd wait a while before skinning it, to let the oil dry completely, otherwise you'll likely get stains on the skin. It's happened to me!
Most any way you decide to skin your boat is OK. Just remember that your kid is relatively tiny compared to a full grown man, so there's no need to go overboard.
Also, your skin is very light, so you won't be able to yank it tight with the stitches without producing big holes. Just dental floss should be perfect for that weight of material. I think artificial sinew is serious overkill.
I skinned the kid's kayak I'm building yesterday . . . it's still tedious even on a 10' boat!
