S&G: Hatch covers

Ok, guys, working on a CLC Chesapeake 16lt.
I'm not planning to glass the deck.
I was wondering, has anyone done recesses hatch covers on a stitch and glue?
I've read how to do it in a stripper, by cutting out the holes, and using the cutouts for the actual hatches.
I'm concerned on a stitch and glue, that the plywood would have too much spring-back to use the hole pieces as the hatches. Especially if we only have one coat of epoxy on the underside, and 2 on the topside, with no glass.
Any thoughts, opinions?
