What you describe is exactly what I have on the plans for the Outer Island. The only difference is I suggest using 3/4 thick common pine for the bow and stern forms. I use a bow shape with a line that indicates the inner stem. You cut out the total bow and stern shapes and taper the edge. Then cut off the inner tapered inner stems and re-attach them with staples. As you strip you keep removing staples and the strips hold the inner stem in position.
