Check with George Dyson, Bellingham WA (Dyson Baidarka and Co.) You can get an address and phone number from a google search, but he has no website and I'm not sure about e-mail. He sells polyester and nylon fabrics. Ask for sample swatches. He may also have some coating materials.
Coating them yourself with urethane is just a matter of picking up a paintbrush, and buying a can of the urethane. It is a fairly common procedure for skin boat builders to cover the entire kayak with fabric, and then paint it with urethane or polyurethane, or hypalon or neoprene. If you want to paint the fabric first, just find a big enough area to work in. It can be a mess, though.
