Minwax Helmsman exterior/marine polyurethane varnish comes in gloss, semi gloss and satin. Make sure you mix well with a stick the stuff on the bottom of the can for the satin because that's the wax that makes it satin.

You can also rub down gloss varnish with fine steel wool to get a satin look.
