Ply framed canoes are possible. Why not, ply frames have been used in open boats successfully and there's a Russian company (I think the company name is Triton) that makes canoes similarly to Yost's alu folders.
You should use good grade marine ply, though, as they will be more exposed to wetting than a kayak ply frame and they will be more visible.
