One of the reasons that almost all strip built kayaks are built by the owners is that it is a very labor intensive process.
About the quickest you could expect to build a reasonable quality kayak would be 200 hours.
Some of those that attract premium prices that you may have seen on various websites take more like 350 or even 400 hours.
There may be a very tiny number of people prepared to pay the same sort of prices that you would pay for a very expensive price of fine furniture, but most of those people are likely to buy from a source that already has established a name for producing outstanding workmanship.
However, I suppose you will never establish yourself if you don't try.
