If you're interested in a business model that makes it cost effective in the market segment that most frequently buys kayaks built of wood, check into Betsie Bay Kayaks. (If you're not from the Great Lakes, yes that is Lake Michigan on the title page.)
BUT- quality sells. If you build quality, people will buy. The difficulty is finding the segment of the market who both appreciates the quality and design and is willing to shell out for it.
Part of the difference between a beautiful kayak and a barrel-back Chris Craft is that one of them requires a decent measure of skill, patience, and physical ability to use, and the other can be piloted pretty ably by even a slightly inebriated tree sloth. That kind of opens your market to a lot of other tree-dwelling forrest creatures, and possibly the odd marsupial.
