Plywood manufacturers no longer use different glues for various plywood - it's all waterproof glue. Marine wood is generally much better quality with more individual laminations and no voids. I built two S&G boats using lumber Co. 1/8 Luan (door skins). I had to deal with voids which you can see by holding a drop light behind the wood. And it doesn't bend as easy as Okume. If this is a first build and you care about the project, try to get the Okume. It's just so much nicer to work with.
As far as glue, strip builders are using common yellow carpenters glue to hold a hundred strips together so I don't think the glue is the big issue since it's encapsulated anyhow.
