I built a S&G canoe out of Luan about 10 years ago and I still paddle it around. The key is to completely seal the wood with epoxy, particularly the edges and ends. Keep it painted and dry it out after use. The main drawback is the voids and non-uniform bend quality of the wood. It is a real pain to cut a piece out and start to bend it into shape and have it snap in half due to a bad spot in the plys.
