Shearwater Boats offers a hatch closing kit, or plans. I have used this system twice, building my own system, and it works very well. Instead of the large knob, I use a stainless steel cap screw. This requires that I carry a hex key to open my hatches. I carry a couple of extra hex keys also.

This is basically the same system that Jay Babina uses.
