Why not get a brand new one? Besides, a "real" Struer isn't stripbuilt but made with very thin and delicate veneer, lightweight and beautiful.
while im no expert on stripbuilding, or anything else for that matter,and have seen your high level of craftmanship i still doubt you could build it as light as the original and weight is a crusial part of the performance.
