Here's a couple pics / drawings of one of my SOF double designs (Sea Tour EXP).
It's a bit longer and narrower ( 20' X 26") than you describe, but it's quite
stable.

The attached pic shows one built in the US with two separate coamings, while
the link / pic show one with a open "washboard" style coaming built in China.
Also included is a link / drawing of the kayak. These kayaks weigh around
50 - 60 lbs which is quite light for a 20ft double.

As always, plans and instructions are free....
