Composite decking has several issues that might not make it a good choice for a kayak frame; for me, the weight of the stuff rules it out well before one gets to the other potential problems.

If I were to build a kayak frame using as little wood as possible, I would take a hard look at aluminum tubing longitudinals and plywood cross sections, lashed and epoxied; more or less a folding kayak assembled permanently. Tom Yost has built at least one kayak this way, and perhaps others have as well, so it does work. The aluminum tubing will probably cost more than wood, however...
