I've wondered the same thing. Looks like weight is the limiting factor.
Another thorught I have had is to use ploycarbonite for the skin. It would be light enough and is very tough. The problem is getting it shaped and gluing the stuff. Someday soon you might see a very tough ploycarb boat - if I ever get around to it.

I've thought it using it for a paddle too.
